I love veggie sandwiches on warm afternoons. It’s not just that they’re easy to assemble. They’re as refreshing as they are filling, and they taste delightful. This veggie sandwich is colorful, fresh, flavorful, and very satisfying in every bite. And it’s even better than what you’ll find at your local deli shop. It’s also more cost effective and healthier. The perfect veggie sandwich does not require you to go out of your way to find special ingredients. In fact, you might already have the ingredients handy in your kitchen.

I usually pair this sandwich with my Easy Tossed Green Salad as it has a light dressing and toasty flavors that pair well together. Or you might pair this sandwich with Baked Potato Wedges, which is how my niece enjoys them. Tomato Soup is another classic option. Its light flavors complement this tasty veggie sandwich quite well.

I use sourdough bread for this sandwich, though any choice of bread should work fine. You can also turn this veggie sandwich into a wrap or a pita pocket. I’m a fan of (vegan) smoked gouda cheese and that’s what I’ve used here, but that can easily be substituted for other types of cheese (e.g., cheddar or American). Any cream cheese will also work, but I prefer vegan chive cream cheese spread for this perfect veggie sandwich recipe. Lastly, it’s fine to include some protein, which may add a little prep time. The Perfect Veggie Sandwich

This veggie sandwich is colorful, fresh, flavorful, and satisfying. It's easy to assemble, refreshing yet filling, and tastes delightful.

Ingredients
  

  • 4 slices Sourdough Bread
  • 1 Avocado small, mashed
  • ½ tsp Lemon Juice
  • ½ cup Arugula
  • 4 slices Cucumber cut thin and long
  • 1 Slicer Tomato thinly sliced
  • 4 tbsp Vegan Cream Cheese Spread
  • 2 slices Plant-Based Smoked Gouda Cheese
  • pinch Salt
  • pinch Pepper
  • sprinkle Red Wine Vinegar

Instructions
 

  • Mash avocado. Mix in lemon juice, salt, and pepper, then set aside.
  • Toast sliced bread and spread mashed avocado on one slice.
  • Spread cream cheese on the other slice and top with arugula, cucumber, tomato, and finally a slice of vegan cheese.
  • Sprinkle salt and pepper along with red wine vinegar, then close the sandwich.
  • Slice in half and serve warm.
