Mango Cilantro Salad
This Mango Cilantro Salad has fresh ingredients, a variety of flavors, and beautiful bright colors. It was inspired by an Omani mango salad recipe I came across one day at the library. Since I was born in Oman, I’m always curious about its cuisine. Naturally, I wanted to come home and try it as soon as possible. I gave it a few tries, made some variations, and it came out delicious every time. I changed a few ingredients to make it vegan and to add more flavor, but the main idea of this recipe has not changed. It remains sweet, spicy, and delightful.
This salad was featured on the menu at Fig+Farro, a plant-based restaurant in Uptown, Minneapolis. My co-worker’s partner told her that “this salad is by far the best thing to come out of this kitchen”. Years later, he still asks me to make the same Mango Cilantro Salad each time I see him. I hope you enjoy this delicious salad as much as he and others do!
This salad makes a terrific summer side dish. It combines the sweet flavors of mangoes, dried cranberries and agave with a twist of spice. And it makes a great combo with The Perfect Veggie Sandwich, Chickpea Tuna Wrap, Pepper Jack Cheese Quesadilla, or Trio-rito.
I encourage you to take out or add any ingredient. For example, some people add chunks of avocado to this salad recipe and give it excellent reviews. I believe recipes should be flexible and always appreciate hearing about new variations upon them.

Mango Cilantro Salad
Ingredients
- 1 lb Mango cubed
- 3 tbsp Cilantro (with stems) minced
- 1 tbsp Shallot or Red Onion finely diced
- 1 tsp Hot Red Chili Pepper finely diced
- 1 tbsp Dried Cranberries
- 1½ tbsp Maple Syrup or Agave
- a pinch Cayenne
- a pinch Salt
Instructions
- Simply mix everything together well.
- Serve chilled as a side dish.
