I love how easy it is to make this zesty recipe. It is a GREAT addition to tacos or burritos. Lime rice can also be served with any cuisine as a side dish with your choice of protein and veggies. The lime, cream and cilantro is a beautiful combo to bring plain rice to life. If you are not a fan of cilantro, you can substitute your choice of fresh herbs (chives, mint, parsley, basil, etc). The idea is to have a bright, fresh and zesty rice dish to add flavors to any meal.

Lime Rice

This is a great, easy addition to tacos or burritos. The lime, cream and cilantro is a beautiful combo to bring plain rice to life.

Servings 2 people

Ingredients
  

  • ¼ cup Long Grain White Rice
  • ½ cup Water
  • 2 tbsp Fresh Cilantro finely diced
  • 1 tbsp Lime Juice
  • 1 tbsp Vegenaise
  • 1 sprinkle Salt
  • 1 sprinkle Pepper

Instructions
 

  • Rinse rice. Then add rice and water to a small pot and bring to a boil. Reduce heat to low and let simmer until water is absorbed, about 20 minutes.
  • In a mixing bowl, add cooked rice, cilantro, lime juice, Vegenaise, salt and pepper. Mix well and serve warm.
