Zesty Garlic Couscous
Zesty garlic couscous is my new favorite recipe for days I’m short of time. It takes a mere 15 minutes to prepare. Couscous can generally be used as a side with most any main course. I use it as a replacement for rice and in salads or bowls with Tahini Dressing. This zesty couscous recipe pairs great with Quick & Easy Tofu Steaks or Best Falafels. You can also top it with sautéed or roasted veggies, or with your choice of protein.
This recipe includes two of my most favorite ingredients: garlic and lemon zest. They’re a perfect combo! Additionally, turmeric gives the dish an appealing look and special taste. We are first going to sauté garlic and lemon zest. Next, we’ll add the rest of the seasonings along with water, bring it to a boil, then remove it from heat. Finally, we’ll add in couscous and let it sit for a few minutes. And that’s it! It really is that simple. I usually garnish this dish with either fresh parsley or green onion. Both work very well for me. But feel free to add any fresh herb that you like and give this recipe your own special touch!

Zesty Garlic Couscous
Ingredients
- 2 tbsp Olive Oil
- 2 cloves Garlic minced
- Lemon Zest of one lemon
- 1½ cups Water
- 1 tsp Lemon Juice
- pinch Turmeric
- ½ tsp Salt
- ¼ tsp Black Pepper
- 1 cup Couscous*
Garnish
- Fresh Parsley or Green Onion diced
Instructions
- Heat a medium size pan over low-medium heat. Add olive oil and garlic and sauté for 30 seconds.
- Add lemon zest and sauté for another 30 seconds.
- Add water, lemon juice, turmeric, salt and pepper and bring it to boil.
- Remove from heat, add couscous and mix well together. Cover with lid and let sit for a few minutes.
- Fluff up the couscous by stirring. Add garnish and serve hot.
