Coconut Turmeric Rice
This coconut turmeric rice is an aromatic alternative to plain white rice. It doesn’t overwhelm with flavors, instead offering hints of coconut and turmeric. Nor does it require any extra prep time. You simply add all the ingredients together and boil it. Just like making regular plain rice with a slight, subtle flavor.
If you are trying to add coconut oil or turmeric to your diet, this is the easiest way to start. I’ve added mustard seeds to this recipe, but these are optional, especially if you don’t have them handy. As for the garnish, it depends on your personal preference. I usually use fresh cilantro, parsley, basil or chives. It just depends on what you’re serving this rice dish with. If you make this recipe differently, I would love to hear from you and learn more!
I originally came across this rice dish while I worked at Seed Cafe, a small vegan restaurant in Minneapolis. I often thought to myself how turmeric rice is fun. Later, I created my own version at home. My husband loves coconut turmeric rice with all kinds of bowls and curries. Some of his favorites to pair it with are Best Falafels and roasted veggies. We also sometimes combine it with Masoor ki Daal, Chana Dal, Coconut Curry Lentil Soup, Moroccan Stuffed Eggplant, Cajun Coconut Curry and Sarson ka Saag.
I encourage you to share your experience in the comments below if you tried this Coconut Turmeric Rice or made it differently.
