Kabuli Chaat (Chickpea Salad)

This kabuli chaat (chickpea salad) is more than just a salad: it packs protein, vitamins, fiber and satisfaction! It mixes a generous amount of plant-based protein with fresh vegetables. This salad was featured on the menu at Fig+Farro, a plant-based restaurant in Uptown, Minneapolis. A customer once told me that he and his friend often traveled to Minneapolis from Los Angeles and that they always made sure to stop here just to have this salad. I hope you enjoy this kabuli chaat as much as I and others do!

We are first going to wash our canned chickpeas and boil a potato. After that we will prepare our vegetables and gently toss all the ingredients together. And that’s it! Kabuli chaat is really this simple to prepare.

This recipe is noticeably different from other chickpea salads. This one bursts with flavors and taste. It has at once a salty, sour, and spicy taste. This is due to a special ingredient, ‘chaat masala’, which you can find at your local South Asian grocery store. It can also be found online. If you like trying new and different recipes in your kitchen, this recipe will not disappoint. I grew up eating kabuli chaat and cannot imagine my life without it. It is a perfect snack that leaves you with a beautiful memory each time.

Kabuli Chaat (Chickpea Salad)
Ingredients
- 2 cups Chickpeas canned and washed
- 1 Golden Potato medium-size
- Water to boil
- ¼ cup Red Onion finely diced
- ¼ cup Fresh Cilantro finely diced
- 14 Cherry Tomatoes diced
- 1½ tbsp Chaat Masala
- 3 tbsp Lemon Juice
- 1 tsp Olive Oil
- ¼ tsp Salt or to taste
Instructions
- Boil a potato over low-medium heat until it is soft (about 20 minutes). Remove from heat, allow it to cool, then dice the potato.
- In a medium size mixing bowl add boiled potato, chickpeas, red onion, cilantro, tomatoes, chaat masala, lemon juice, olive oil and salt. Mix everything well together.
- Refrigerate for at least 30 minutes and serve chilled.
