This recipe is a favorite of mine and makes for an easy and delicious lunch. It’s packed with flavors, nutrients and rich ingredients. It’s also a great plant-based substitute for those trying to cut down their meat intake. First we’ll be making a vegan tuna salad, which is quick and easy to prepare. You’ll be amazed how similar this tastes to actual tuna!

This Chickpea Tuna Wrap recipe pairs perfectly with my Tomato Soup Recipe. It can also be served with a side of chips or green salad.

Chickpea Tuna Wrap

Ingredients
  

  • 15 oz Chickpeas (1 can)
  • cup Celery minced
  • ¼ cup Red Onion minced
  • 2 tsp Garlic minced
  • 3 tbsp Fresh Dill or Parsley minced
  • tsp Lemon Juice
  • 1 tbsp Capers chopped
  • 1 tsp Dijon Mustard
  • cup Vegan Mayonnaise add more for creamier texture
  • ½ tsp Salt
  • ¼ tbsp Black Pepper
  • 1 pinch Cayenne Pepper optional
  • ½ Cucumber cut into matchsticks
  • 1 Carrot cut into matchsticks
  • 2 Tortillas burrito size

Instructions
 

Preparing Chickpea Tuna

  • Pulse chickpeas in a food processor (do not blend all the way; it should not be a paste) or simply mash them in a mixing bowl with a fork.
  • Add celery, onion, garlic, herbs, lemon juice, capers, dijon, mayonnaise, salt and pepper. Mix well together.

Making Chickpea Tuna Wraps

  • Lay tortilla flat; add one cup of chickpea tuna in the middle along with fresh cut cucumber and carrots. Invert the left and right-hand side and roll it up. Use water on edges to seal the wrap.
  • Heat a flat pan on medium heat then place wrap in the middle. Flip the wrap occasionally until all sides are golden brown.
  • Repeat with second tortilla.
  • Cut wraps in half and serve immediately.

Notes

Use gluten-free tortillas to make this recipe gluten-free.
