I’m excited to share one of my favorite dishes for a snack or a light lunch. I love sharing these spring rolls when I host friends because they are so easy and flavorful. Working with rice paper can be a challenge at first, but once you learn how to handle it, you’ll find it both fun and easy.

For vegetables I use avocado, cucumber, carrots, cabbage, basil and cilantro to add flavors and refreshment. For protein I use baked tofu, but feel free to swap that out with your own choice of protein. I like it best the way I’ve shared it here, but don’t hesitate to add in your own favorite ingredients or simply what you have handy and please share your thoughts with me!

This light, healthy and flavorful appetizer is easy to assemble and more refreshing than the spring rolls you’ll generally find at a restaurant. They’re especially delicious if served with peanut sauce, which adds rich and creamy flavors. Along with the toasted peanuts, the peanut sauce is my favorite part of this recipe and really complements the other ingredients. It’s a perfect blend!

Fresh Spring Rolls

Ingredients
  

  • 6 Spring Roll Wraps
  • 7 oz Tofu
  • 1 Avocado sliced
  • 1 Cucumber matchsticks
  • 1 Carrot matchsticks
  • 1 cup Cabbage shredded
  • ½ cup Fresh Basil Leaves chopped
  • 2 tbsp Peanuts crushed

Instructions
 

  • Preheat the oven to 350 degrees. Cut tofu into long strips. Spread tofu on a baking sheet pan and bake for 30 minutes.
  • In a small skillet over medium heat, toast the peanuts until slightly brown, then remove from  heat and set aside.
  • Dip spring roll wraps in warm water for 5-10 seconds. Then remove from water and lay flat.
  • Add a reasonable amount of each  ingredient in the middle of each wrap. Then invert the left and right hand side and roll the wraps up tightly.
  • Serve immediately with peanut sauce.
