These baked potato wedges are loaded with flavors and have a crispy texture. They’re a fun finger food to try! If you are looking for some heartier bites or a great side dish, these little baked potato bites are sure to be a hit! They’re great as party appetizers or for a sharing plate. I’ve brought them to potlucks and picnics a few times with various dipping sauces and they’re always well liked. Not only that, but they’re easy to make. They don’t require much prep time and kids will love them.

We’re first going to wash potatoes and cut them into wedges. (I personally don’t peel them, but that’s a personal preference.) Then we’ll add some dried herbs, light seasonings, and olive oil and mix it all together. I always bake these potato wedges, rather than fry them, for health reasons. They are gluten-free too.

You can get more creative and add your choice of seasonings and dipping sauces. Personally, I love these baked potato wedges with smoky BBQ sauce. Some of my friends like to dip them in Tahini Sauce. Others prefer them with an Asian sweet chili sauce. They can also be a perfect snack with sour cream. It just depends on your personal preference or what you have handy. This baked potato wedges recipe can be very versatile.

Baked Potato Wedges

These baked potato wedges are loaded with flavors and sure to be a hit! They don't require much prep time and kids will love them.

Servings 2 people

Ingredients
  

  • 2 Potatoes medium size
  • 1 tbsp Olive Oil extra virgin
  • 1 tsp Mixed Dried Herbs
  • ½ tsp Garlic Powder
  • ¼ tsp Red Chili Powder or Smoked Paprika
  • ½ tsp Salt or to taste
  • ¼ tsp Black Pepper

Garnish

  • Fresh Parsley

Instructions
 

  • Heat oven to 350 degrees.
  • Wash and cut potatoes into wedges. Place them in a mixing bowl and add extra virgin olive oil, mixed dried herbs, garlic powder, red chili powder or smoked paprika, salt and pepper. Mix well.
  • Spread mixture on a baking sheet and bake for 35 minutes, then flip the wedges on their sides and bake for another 10 minutes or until crispy and golden-brown.
  • Remove potatoes from the oven. Allow them to cool down for a few minutes. Then transfer to a serving plate, add garnishes and serve with your choice of dipping sauce.

Notes

Some new ovens have very high intense heat. Check these potato wedges after 25 minutes and continue to keep an eye on them so they do not burn.
