I’ve had scrambled tofu in many restaurants and have always felt a little underwhelmed. Tofu scrambles can be made very simply with only oil, salt and pepper. This recipe takes it up a notch by adding vegetables and seasonings. It’s great by itself, or try it on top of avocado toast or in a breakfast burrito. It’s fantastic!

Breakfast Tofu Scramble
Looking for a great, tasty tofu scramble? This recipe takes it up a notch by adding vegetables and seasonings.
Ingredients
- 7 oz Tofu firm
- ¼ cup Red Onion finely diced
- 2 tbsp Sun-Dried Tomato diced
- ¼ cup Cilantro finely chopped
- 1 tsp Garlic Powder
- 1 tsp Nutritional Yeast
- ½ tsp Turmeric Powder
- ½ tsp Salt optional
- ½ tsp Black Pepper optional
Instructions
- In a mixing bowl, combine tofu, onion, sun-dried tomato, cilantro, garlic powder, turmeric powder, salt and pepper.
- Heat a skillet on medium heat. Add tofu mixture and sauté for 5 to 7 minutes. Sprinkle some water if the mixture sticks to the pan.
- Remove from heat and serve immediately.
