I created this vegan chocolate pudding one Valentine’s day for my husband as I wanted a rich and dreamy dessert for a date night. Not only is this recipe dairy-free, but it’s simple, too. And it won’t take you more than fifteen minutes. You just slowly whisk everything together, add garnishes and serve it warm. Or, if you prefer to serve it chilled, then refrigerate for at least an hour before serving. This vegan chocolate pudding is really that easy. And it makes for a great snack or delicious treat after a workout.

Since my husband loves sweets, I dabble at creating some despite my limited baking experience. While I personally don’t have a sweet tooth, I am slowly learning how to bake for him. It’s a good thing there are so many blogs and cookbooks out there! I find these so inspirational as I set about creating my own recipes. They help me satisfy his palate and continue to impress him.  Having said all that, the beauty of this recipe is that it doesn’t require any baking at all.

I am confident that anyone with or without a sweet tooth will enjoy this dessert. It’s family friendly, kid friendly, and even appeals to people such as myself who prefer more savory flavors. Another great thing about this recipe is that you can top it with your choice of garnish and it will still work and taste delicious.

Easy Vegan Chocolate Pudding

This vegan chocolate pudding makes for a dreamy dessert on a date night. Not only is this recipe dairy-free, but it’s simple, too.

Servings 2 people

Ingredients
  

  • ¼ cup Cane Sugar
  • 2 tbsp Cocoa Powder unsweetened
  • 2 tbsp Corn Starch
  • 1 pinch Salt
  • 1⅛ cup Plant-Based Milk
  • 1 tbsp Peanut Butter
  • 1 tsp Vanilla Extract

Possible Garnishes

  • Whipped Cream vegan
  • Chocolate Chips
  • Fresh Berries
  • Crushed Almonds or Pecans

Instructions
 

  • In a medium size saucepan combine sugar, cocoa powder, cornstarch and salt. Mix together well.
  • Heat the pan over medium heat and stir in milk slowly. Keep stirring for 5 to 7 minutes, until the mixture boils or thickens.
  • Remove from heat and stir in peanut butter and vanilla extract. Keep stirring until everything melts.
  • Pour mixture into two small containers. Garnish and serve warm.
  • Optional: If you prefer a chilled pudding, then place containers in the refrigerator for at least an hour and allow them to cool down. Then stir the chilled pudding a few times to give it some fluff. Finally, top with your choice of garnish and serve chilled.
