We all love guacamole. But, I think we can all agree that some guac is tastier than others. I do not like to add tomatoes to my guacamole because it makes it runny. I prefer a thick and chunky texture, which is why I highly discourage using a food processor for this recipe. I have made this version multiple times and it has always been a hit with my friends and family. Spinach is optional, but I like the bright green color it brings. It makes it so easy on the eyes. My secret ingredient is ‘fresh mint’; it somehow embraces all the flavors and makes it taste amazing!

Try it in a taco or burrito with my chipotle black beans! It also goes great with my pepper jack cheese quesadilla!

Ingredients
  

  • 1 tbsp Red Onion minced
  • 2 tbsp Cilantro finely diced
  • 1 tsp Mint Leaves minced
  • ¼ Jalapeño minced
  • 2 tbsp Spinach minced, optional
  • 1 tsp Lime Juice fresh
  • 1 Avocado mashed
  • ½ tsp Salt
  • ¼ tsp Black Pepper

Instructions
 

  • Add red onion, cilantro, mint, jalapeño, spinach (if using), lime juice, avocado, salt and black pepper in a mixing bowl and mix well together.
  • Serve chilled.

Notes

Spinach is optional, but it adds a vibrant green color which makes the guacamole more appetizing.
