Smoky Sun-Dried Tomato Hummus
Hummus is a chickpea puree with a creamy texture. It’s a tasty, healthy spread for sandwiches, salads and wraps. Or you can serve it with veggies, chips, falafels, or warm pita bread. It’s also surprisingly easy to make. You’ll be amazed how much better freshly made hummus tastes compared to the store bought versions.
I’ve adjusted this recipe many times, fine-tuning it with each new batch. Eventually I hit upon the perfect balance of ingredients. I’ve blended smoked paprika and sun-dried tomatoes into the recipe for some extra mouthwatering flavors. It tastes delicious without a doubt! I once brought a batch to a summer potluck and it disappeared within a few minutes; everyone loved it.

Smoky Sun-Dried Tomato Hummus
Ingredients
- 15 oz Chickpeas or 1 can, washed
- 8 pieces Sun-Dried Tomatoes
- ¼ tsp Smoked Paprika
- 2 cloves Garlic medium size
- 1 tbsp Fresh Lemon Juice
- ½ tsp Salt
- ½ tsp Black Pepper
- 2 tbsp Fresh Parsley chopped
- 2 tbsp Olive Oil
- ½ cup Water
Garnish
- 1½ tbsp Olive Oil optional
- Fresh Parsley Leaves
- 1 pinch Smoked Paprika
Instructions
- In a food processor, add chickpeas, sun-dried tomatoes, paprika, garlic, lemon, salt, pepper, parsley. Begin blending.
- Drizzle olive oil and water while blending, until the mixture is smooth. This technique prevents the oil from separating from the hummus after blending.
- Add garnishes and serve chilled with pita, fresh veggies, falafels or chips.
