These sweet crispy buns are inspired by African doughnuts such as puff puff. Their crispy, golden brown outside and spongy inside makes for a rich, tasty snack. I don’t have a sweet tooth myself, but if I crave something sugary with my black coffee, Nigerian inspired buns are my go to treat. Maybe because they are so simple, fast, and taste delightful!

We are going to make these sweet crispy buns vegan, without eggs or dairy, and with an optional pinch of spice. These buns are so fluffy and taste so good they are hard to resist. And it should come as no surprise that kids will love them.

I sometimes apply a coating of coconut flakes or sugar, but they taste perfect without this. Personally, I love a hint of cinnamon and vanilla with these buns, but feel free to experiment and add your choice of spice (e.g, nutmeg, clove, cardamom, pumpkin etc). Sweet Crispy Buns

These sweet crunchy buns are inspired by African doughnuts. Their crispy, golden outside and spongy inside makes for a rich tasty snack.

Ingredients
  

  • 1 cup All Purpose Flour
  • 1 tsp Baking Powder
  • tsp Salt
  • 4 oz Brown Sugar
  • 1 tsp Cinnamon
  • 1 tsp Vanilla Extract
  • ½ cup Water
  • Oil for deep frying

Optional Garnishes

  • Sugar
  • Coconut Flakes

Instructions
 

  • Add all dry ingredients in a mixing bowl and mix well together.
  • Add water slowly. Start with a half cup of water and add more if needed until the mixture resembles the picture shown above. Let settle for 15 minutes.
  • Heat oil in a deep pot on medium-high heat (avoid overheating oil or the rolls’ insides will not fully cook). Using a small ice cream scoop, drop scoops of mixture into oil without overcrowding them. Fry until all sides are golden brown, about 5 to 7 minutes.
  • Remove from heat and lay rolls on a paper towel to absorb excess oil. Serve warm!
  • Optional: Roll over powdered sugar or coconut flakes.
