Vegan Oatmeal Raisin Cookies

These vegan oatmeal raisin cookies are soft, chewy, and delicious. I’ve always been a fan of oatmeal raisin cookies. After making a few different versions, I finally perfected this vegan oatmeal cookie recipe. Besides the main ingredients, it has touches of cinnamon, coconut flakes and vanilla.

After baking these cookies, I sometimes drop them off to my work-from-home friends so they can enjoy a quick snack with their tea or coffee. Or when I’m hosting an event, I’ll give away these cookies in goodybags. Everyone who tries them praises them highly!

First, we’ll mix the dry and wet ingredients separately. Then we’ll fold them together to get a crumbly cookie dough. Next, we’ll roll the dough into cookie balls and gently press them to expand their size. We’ll sprinkle some salt and sugar on each cookie for extra flavor. And finally, we’ll bake them. Vegan Oatmeal Raisin Cookies
Ingredients
- ¾ cup Rolled Oats
- ½ cup All-Purpose Flour
- ½ cup Coconut Flakes
- ½ tsp Baking Soda
- ¼ tsp Salt
- ½ tsp Ground Cinnamon
- ½ cup Raisins
- ¼ cup Vegan Butter
- ½ cup Cane Sugar
- 1½ tbsp Agave
- ½ tsp Vanilla Extract
- 1 tbsp Soy Milk
- Salt sprinkle
- Sugar sprinkle
Instructions
- Preheat the oven to 350 F.
- In a small mixing bowl add oats, flour, coconut flakes, baking soda, salt, cinnamon and raisins. Mix and set aside.
- In a medium size mixing bowl add butter and sugar. Combine until smooth.
- Add agave, vanilla extract and soy milk and mix again.
- Add dry mixture to wet mixture. Keep mixing until it resembles crumbly cookie dough.
- Using both hands, start rolling dough into 1 ½ inch size cookie balls.
- Place cookie dough balls on a baking sheet pan. Gently press them with a spatula to expand their size.
- Sprinkle salt and sugar on each cookie and bake them for twelve minutes.
- Remove cookies from the oven and allow them to cool down before serving.
