Walnut Meat

This tasty walnut meat is a great addition to your pasta, taco, burrito, nacho platter, rice bowl, salad, toast topping, stuffed vegetables…you name it! It’s a true staple in our home. We particularly love it in lasagna. Only a few handy ingredients are needed to transform these nuts into a rich, savory, flavorful meat substitute. Whether you’re looking for a meat substitute or just want to try something healthy and new, this walnut meat recipe will surprise you by how quick and delicious it is.

We’ll simply be adding all our ingredients into a food processor and blending them. We also need to be careful not to over-blend things as we don’t want our meat turning into a paste. If you prefer your walnut meat chunky and crunchy, then you should merely pulse it.

Walnut Meat
Ingredients
- 1 cup Walnuts
- 1 cup Red Onion chopped
- 1 cup Roma Tomato chopped
- 5 cloves Garlic
- 1 tsp Italian Seasoning
- 1 tsp Smoked Paprika
- 1 tbsp Soy Sauce
- ½ tsp Salt or to taste
- 1 tbsp Oil if using water, do not use
- ¼ cup Water if using oil, do not use
Instructions
- In a food processor add walnuts, onion, tomato, garlic, Italian seasoning, smoked paprika, soy sauce and salt. Pulse until it looks like uncooked ground meat. Do not over-blend.
- Heat a medium size pan over medium heat. Add this mixture along with oil/water, cover with lid and simmer for 5 minutes. Stir frequently.
- Tilt the lid slightly open and reduce the heat to low. Simmer for 20 minutes. Stir frequently to avoid burning, and sprinkle water if walnut meat sticks to the pan.
