Wash and cut potatoes into wedges. Place them in a mixing bowl and add extra virgin olive oil, Italian seasoning, garlic powder, red chili powder or smoked paprika, salt and pepper. Mix well.
Spread mixture on a baking sheet and bake for 35 minutes, then flip the wedges on their sides and bake for another 10 minutes or until crispy and golden-brown.
Remove potatoes from the oven. Allow them to cool down for a few minutes. Then transfer to a serving plate, add garnishes and serve with your choice of dipping sauce.
Notes
Some new ovens have very high intense heat. Check these potato wedges after 25 minutes and continue to keep an eye on them so they do not burn.
