Lime Rice

This is a great, easy addition to tacos or burritos. The lime, cream and cilantro is a beautiful combo to bring plain rice to life.

- ¼ cup Long Grain White Rice washed
- ½ cup Water
- 2 tbsp Fresh Cilantro finely diced
- 1 tbsp Lime Juice
- 1 tbsp Vegan Mayonnaise
- 1 sprinkle Salt
- 1 sprinkle Pepper
Rinse rice. Then add rice and water to a small pot and bring to a boil. Reduce heat to low and let simmer until water is absorbed.
In a mixing bowl, add cooked rice, cilantro, lime juice, vegan mayonnaise, salt and pepper. Mix well and serve warm.
