In a food processor, add peanuts, peanut butter, garlic, dried red chili pepper, sriracha, soy sauce, vinegar, sugar and lime juice. Begin blending.
Drizzle water while blending until the mixture is smooth. Add more water if you desire a thinner texture.
Serve chilled with fresh spring rolls or a Thai salad. Or serve hot with rice noodles.
Notes
If the sauce becomes too thick after refrigeration, add water and whisk to thin it out to the desired consistency.This peanut sauce goes especially well with my Thai salad.
