Smoky Sun-Dried Tomato Hummus

- 15 oz Chickpeas or 1 can, washed
- 8 pieces Sun-Dried Tomatoes
- ¼ tsp Smoked Paprika
- 2 cloves Garlic medium size
- 1 tbsp Fresh Lemon Juice
- ½ tsp Salt
- ½ tsp Black Pepper
- 2 tbsp Fresh Parsley chopped
- 2 tbsp Olive Oil
- ½ cup Water
Garnish
- 1½ tbsp Olive Oil optional
- Fresh Parsley Leaves
- 1 pinch Smoked Paprika
In a food processor, add chickpeas, sun-dried tomatoes, paprika, garlic, lemon, salt, pepper, parsley. Begin blending.
Drizzle olive oil and water while blending, until the mixture is smooth. This technique prevents the oil from separating from the hummus after blending.
Add garnishes and serve chilled with pita, fresh veggies, falafels or chips.
