The Perfect Veggie Sandwich

This veggie sandwich is colorful, fresh, flavorful, and satisfying. It's easy to assemble, refreshing yet filling, and tastes delightful.

- 4 slices Sourdough Bread
- 1 Avocado small, mashed
- ½ tsp Lemon Juice
- 4 tbsp Vegan Cream Cheese Spread
- 2 slices Plant-Based Smoked Gouda Cheese
- ½ cup Arugula
- 4 slices Cucumber cut thin and long
- 1 Slicer Tomato thinly sliced
- pinch Salt
- pinch Pepper
- sprinkle Red Wine Vinegar
Mash avocado. Mix in lemon juice, salt, and pepper, then set aside.
Toast sliced bread and spread mashed avocado on one slice.
Spread cream cheese on the other slice. Top with a slice of vegan cheese, arugula, cucumber, and tomato.
Finally sprinkle salt and pepper along with red wine vinegar, then close the sandwich.
Slice in half and serve warm.
