Filling
- 3 lbs Apples peeled, cored, sliced
- 1 cup Water
- ¼ tsp Salt
- 4 tbsp Cane Sugar
- 2 tbsp Cornstarch
- 1½ tsp Cinnamon Powder
- 4 tbsp Lemon Juice
Crust
- 2½ cup All-Purpose Flour
- 4 oz Vegan Butter chopped
- 1 tbsp Cane Sugar
- ½ cup Water ice-cold
Filling
In a small mixing bowl, whisk together salt, sugar, cornstarch, cinnamon powder, lemon juice and water, then set aside.
Heat a large skillet over medium heat, then add apples and water and sauté until the apples are soft. Stir in seasonings and mix well, making sure the apples are completely covered with glaze. Remove from heat.
Crust
In a food processor, add flour, butter and sugar. Pulse ingredients while slowly adding water until it forms into a dough.
Transfer dough to a flat surface. Sprinkle some flour and form dough into a ball. This takes about 1 minute. Make sure all ingredients are combined and that butter is not melted.
Cut dough in half. Roll both halves in a thin, round shape. Place them on a flat tray while adding a layer of parchment paper in between and refrigerate for at least 30 minutes.
Assembling
Preheat the oven to 350F.
Remove parchment paper and use fingers to press one crust into a pie pan without stretching.
Cut the second crust in the shape of long ribbons. Place these strips on the pie over and under one another, covering the entire area in a woven pattern.
Fold-in all corners of the crust. Or trim them, if preferred.
Bake for 45 minutes until the crust is golden.
Some new ovens have very high intense heat. Monitor that the pie does not burn.
Use gluten-free flour, if preferred.
Add a scoop of vanilla ice cream before serving, if preferred.
