Walnut Meat

Ingredients
  

  • 1 cup Walnuts
  • 1 cup Red Onion chopped
  • 1 cup Roma Tomato chopped
  • 5 cloves Garlic
  • 1 tsp Italian Seasoning
  • 1 tsp Smoked Paprika
  • 1 tbsp Soy Sauce
  • ½ tsp Salt or to taste
  • 1 tbsp Oil if using water, do not use
  • ¼ cup Water if using oil, do not use

Instructions
 

  • In a food processor add walnuts, onion, tomato, garlic, Italian seasoning, smoked paprika, soy sauce and salt. Pulse until it looks like uncooked ground meat. Do not over-blend.
  • Heat a medium size pan over medium heat. Add this mixture along with oil/water, cover with lid and simmer for 5 minutes. Stir frequently.
  • Tilt the lid slightly open and reduce the heat to low. Simmer for 20 minutes. Stir frequently to avoid burning, and sprinkle water if walnut meat sticks to the pan.

Notes

Yields 2½ cups of walnut meat.
Stores great in a refrigerator for up to two weeks.
